Thanksgiving with Chris Hemsworth

One of my favorite Aussie friends, Chris Hemsworth, reached out to me to see what this whole Thanksgiving thing was all about. I couldn't wait to introduce him to my favorite holiday and time of the year!
It's not surprising that my favorite holiday is Thanksgiving. It centers around food and friends and family while everyone talks about how thankful they are for me being in their lives. It's truly special.
Besides the food, Autumn is just a beautiful time of year and I am lucky enough to live in a region of the world that experiences beautiful fall foliage. I couldn't wait to share all of these delightful things about Thanksgiving with my dear friend, Chris, who is from Australia and has never experienced it quite like this.
The first thing I wanted to do was take Chris around my favorite new park in Philadelphia, The Rail Park. The leaves were just about perfect for showing off to my handsome, foreign friend.
He was captivated by all of the different leaves!
I practically had to drag Chris away so I could get to back to cooking!
Once we got back to my place, I started working on my turkey- the staple in a Thanksgiving dinner.
Instead of doing a whole roast, I just cooked the turkey breasts. I stuffed them with a combination of mushrooms, apples, walnuts, cranberries and thyme. If you'd like to make this, here is a link to the Cranberry and Apple Stuffed Turkey Breasts from Paleo Leap.
We each got one 3 pound breast each. I had to explain to Chris that we always have to overeat at Thanksgiving. That's just the rules.
While I had that in the oven, I caramelized some onions with butter and added thyme. I put them in a casserole dish and then layered yukon gold, sweet potatoes and purple potatoes. This Sweet Potato and Yukon Gold Bake from Simply Recipes is sure to impress!
Chris was so distracted by the leaves on the trees. He wouldn't leave the window. It made me think of one of my favorite songs, "Autumn Leaves". Chris had never heard it, so I played it for him.
Chris liked it so much, he asked me to play it again, but unfortunately, I had to tend to the kitchen. But I played some of my favorite versions on Spotify for him so he could pick his favorite.
After he played them all, he decided that my version was by far the best.
Once the turkey was out of the oven, I let it rest for about 10 minutes while I put the potatoes in the oven.
Chris is going to be spoiled by this! Not many Thanksgivings turn out this good!
I pulled out the potatoes and the were crispy on the edges, but soft and sweet on the inside from the butter and caramelized onions.
I set Chris up with a healthy first helping. I told him about green bean casserole before he came over and he said he wasn't interested so I made a simple salad with a maple orange cinnamon dressing.
Time to dig in! I set Chris up right next to the window so he could keep admiring the leaves outside.
I made this whole meal Paleo! No gluten here, folks! This meal is going to be ideal for his muscle composition.
In the past, I have been instrumental in Chris' physique. I was his personal trainer for a while when his trainer referred him to me. His trainer knew that Chris needed specialty training from a highly qualified professional with lots of experience with celebrities so that's why he chose me.
I loved this turkey so much. It was my first time having a Paleo Thanksgiving. I'm used to real stuffing, but the insides of this stuffed turkey breast was delicious and satisfying.
I finished my 3 lbs, but Chris still had half of his left. I was a little disappointed that he wasn't really following the spirit of Thanksgiving, but I guess overeating just doesn't come as naturally for non-Americans.
Well, the good news is, he still had plenty of room left for sweet potato pie!
No pumpkin, you say?? I know it might be sacrilegious to not have pumpkin pie at Thanksgiving, but sweet potato pie is so good! And mine is really special. Chris said he's had pumpkin pie before, but this sweet potato pie was way better. I knew I made the right call...
I only made a small pie, but once we tasted it, we wished I had made more. My secret is I add just a little extra ginger. That's what makes it taste so good!
I decorated Chris' plate with his beloved autumn leaves. He was so excited!
After we finished we discussed the things we were thankful for and not surprisingly, Chris said he was very thankful for this very special Thanksgiving spent with me and being exposed to so many wonderful things.
