Kate Hudson's Huli Huli Chicken

Every summer, Kate and I go on a vacation to Hawaii. We love Hawaii almost as much as the paparazzi loves seeing us in our bikinis! We decided to have a little fun, so I threw us a luau!
Kate's favorite thing to eat in Hawaii is poke bowls, but my girl is pregnant and raw fish is off limits. Soooo sad!!! She doesn't usually eat meat, but she told me she would make an exception since she's been having some pregnancy cravings for it.
The first thing I did was pick a few ripe mangoes right off of a tree outside and make my famous mango salsa.
I just love all the fresh fruit I get to have in Hawaii!
Before I got really involved in cooking, I just sat around with Kate and her boyfriend, Danny, and we just chatted over some Mai Tais! No need to rush things- we are on island time!
Kate had to have mocktail. Sorry, Kate! Next year we can get back to real mai tais!
The Mai Tai's I made had rum, coconut rum, amaretto, orange juice, lime juice, grenadine.... and more rum.

After chips and dip, I got to work on my Huli Huli Chicken. I already had it marinating overnight so all I had left to do was put my rub on it and roast it on my massive outdoor rotisserie.

Here's what my Hawaiian Luau platter looked like. I made a side of cabbage salad with crunchy ramen topping from Saveur Magazine. Don't knock the ramen topping until you've tried it!
I made this Hawaiian Spam Fried Rice from Foodology Geek, but I had to sub turkey bacon for the spam. Even though spam is important for a lot of Hawaiian food, I just couldn't do that to Kate. It's bad enough we are eating meat!
I've known Kate since 1999. Her agent suggested she study Famous Adriane for her role in Almost Famous. We really hit it off and the movie turned out great! We've been going to Hawaii ever since.
The meal wouldn't be complete without some Hawaiian Wedding Cake. I got the recipe from Ezra Pound Cake. We definitely didn't need any more food after that feast, but this cake was the cherry on top!
We had so much fun! I can't wait to go back next year with her new little one!
