Cheese Brats with Björk
I made Björk my spin on a classic Icelandic comfort food- the hot dog! She knows it as Pylsa, and my version is pretty different than the traditional, but Björk and I are all about pushing boundaries!
Björk called me up and asked if she could come over. She sounded kind of stressed and I could tell she just needed a break. I told her to bring her PJ's and I'll make some comfort food. I don't know much about Icelandic food, but I do know that they love hot dogs!
Now, typically an Icelandic hot dog, Pylsa, is made with mostly lamb and is topped with raw onions, crispy onions, ketchup, sweet brown mustard (Pylsussinep) and remoulade. One of the most important aspects is that the meat is free range and local and very unique to Iceland. Since we aren't in Iceland, we had to settle for organic chicken bratwurst from our local Whole Foods.
The truth is, we are never going to top a classic Pylsa, so we went in a totally different and delicious direction. I've been meaning to try a recipe, Beer Brats with Beer Queso, from Foxes Love Lemons so I decided now is the time!
The first thing I did was grate some super sharp cheddar. Of course, I use the finest sharp cheddar from DiBruno Bros.
The second thing I did was open two bottles of my favorite lager beer. Cheers!
This recipe is fairly simple and comes together pretty quickly. The most important thing with these brats is to make sure you have good ingredients. I made sure I had the best bratwursts, the best cheddar, my favorite lager and of course... PRETZEL BUNS!
It's worth the extra effort of finding pretzel buns or even making them if you must. Nothing beats the combination of beer, cheese, pretzels and bratwurst!
The first time I met Björk was when I was 5 years old and she was the lead singer in a band called the Sugarcubes. I've always been a fan of cool music ever since I was little and for my 5th birthday, all I wanted was a McDonald's birthday party and for the Sugarcubes to play for me. I got my wish! And as a special surprise, Björk had come up with a special song just for me!
The combination of the beer cheese and the pretzel buns is just divine. Björk and I wish we could've had an entire vat of that beer cheese. We want it on everything!
Time to eat! We topped these off with a few jalapeños and went at it.
You should've heard us! We were giggling and going on. Maybe it was the beer, maybe it was the cheese, it could've been the sausages. All I know is, these little doggies did the trick!
I knew I could make Björk smile with this one!
Even though we had a generous amount of cheese on the dogs to begin with, Björk needed a little more!
At the end of the night we decided to watch our favorite reality show from 2004, Mad Mad House. It was a night full of guilty pleasures, but sometimes that's just what you need!
I can't think of a better way to end our day than with this tv classic!

The Sugarcubes have never written any songs about Famous Adriane and have never played at a McDonald's birthday party for her. Famous Adriane has never even had a birthday party at McDonald's. She did spend a birthday there, but her mom just stuck a candle in a hamburger and let her have a sundae.
It remains unclear as to whether Björk has ever seen Mad Mad House.
